It’s always fun when you can find an idea that is really a base for other imaginative variations. Here’s just such an idea:

Walking Chicken BBQ from FreshHomeIdeas.com Easy, neat, portable.

Using a small, wide-mouth mason jar, serve BBQ chicken with wooden cocktail skewers, outside on the patio. Add a beer or sangria and it’s a relaxing evening with friends (Fresh Home Spring 2010).

This idea is a great platform for other ideas –

Why not grilled shrimp with pineapple and lime?

Or yellow and red cherry tomatoes, fresh mozzarella cubes or bocconcini and basil?

Or chicken breast cubes, mandarine orange slices and pitted Kalamata olives?

Or Spicy Italian sausage and peppers?

Or. . .

Walking ice cream sundaes? Sweet.

Frozen Custard, Ice Cream & Gelato

Summertime. On a hot summer night what could be better than heading out for an ice cream cone?

Kopp’s Frozen Custard in Milwaukee is the very best frozen custard on the planet. Definitely one of the main advantages of living in or near Milwaukee. Flavors like Cherry Amaretto Cheesecake, Root Beer Float and German Apple Streusel will keep you coming back. Check out their daily flavor forcast. Frozen custard has a higher butterfat content than regular ice cream and melts almost on contact with air. But it is divine. Kopp’s burgers and fries live up to a similar reputation. But plan to go with someone else and split the giant burgers and leave room for the frozen custard!

Closer to home, the Grande Ole Creamery on Grand Avenue in St. Paul makes the ultimate sweet cream vanilla ice cream. Warm, crispy waffle cones are hand made right in the store, just as they have been for more than 30 years. Each cone is stopped with a malted milk ball at the bottom. Order the “split” for two flavors in one.

Not too far away you can try Izzy’s Ice Cream on Marshall Avenue in St. Paul. Don’t forget to ask for your free Izzy scoop on top – then wander around one of the oldest neighborhoods in St. Paul as you enjoy your ice cream.

Ring Mountain Creamery in Eagan offers amazing gelato flavors. Try “Chocolate Chili” or “Salty Peanut.” Italian gelato is lower in fat and sugar than ice cream but it has all the flavor. I especially love their green tea gelato. It’s a great way to finish a sushi dinner.

Of course Bridgeman’s Restaurant in Minneapolis still carries my all time favorite – licorice ice cream.

Picnic in a Jar

Picnic months have finally arrived!  Picnic in a Jar. Now this is a great idea for those of us with plenty of canning jars taking up shelf space.

Here it’s pictured with BBQ beef, coleslaw and baked beans. But why not chili, cheddar cheese, sourcream & cornbread on top, or chicken & rice salad with sliced apples, or a fresh pita quarters with spicy hummus and olives?

Instead of lemonade, I would put lemonana in the second jar. Lemonana is the Israeli answer to sweltering desert summertime heat.

Recipe: Make fresh lemonade. Pour into a jar or water bottle that can go in the freezer. Leave room at the top of the jar for expansion in the freezer. Stuff the jar of lemonade with a handful of fresh mint. Freeze.

Take with you for the day. Enjoy it as it melts. Keep it in your car while you run errands. It will stay cold and fresh until the end of the day. You stay refreshed and hydrated.

Happy Mother’s Day tomorrow, to all those who have mothered someone. Today I’m taking time to reflect on all the wonderful women (and even men) who were mothers for me during my life. They are many. By the same token, hopefully I too, served as a mother for others when they needed it.

If you would like a fun, easy, healthy and green gift to take to someone special in your life consider these two fun ideas I found in an old copy of FreshHome magazine (Summer 2010).

Idea #1

In a low, but clear wide-mouth jar (small mason jar) place cherry tomatoes. Use them as “marbles” to stabilize a handful of stemmed basil leaves. Now you have a floral arrangement that looks beautiful, smells great and tastes wonderful. Tie with a ribbon and off you go!

Idea #2

Take a mug or cup and saucer purchased at a garage sale or Good Will. Place potting soil with a small herb plant inside. It could be mint, lavender, chamomile, thyme, oregano. Herbs that can be used for tea are a natural choice. Insert a toothpick with an identifying label attached. Serve it up!

Cinco de Mayo

Cinco de Mayo! While not Mexico’s Day of Independance, it is a day to celebrate Mexican heritage.

Food, of course, comes into play here. Do you like spicy food? We most definitely do. Here’s a picture of the grilled, stuffed, chili rellenos we made.

Take a little time today and explore Mexican culture. Try a Mexican restaurant. Read about Mexican history. Volunteer to teach English as a second language in a Spanish speaking community. Learn Spanish at the same time. Watch a film to learn more about conditions immigrants face, such as Amexicano (play instantly on Netflix). Read my post on Juarez. Visit Ciudad Juarez, Mexico just across the border from El Paso, Texas and stretch out of your comfort zone.

Become aware of the severe poverty in which most of the world lives. Become aware of our role in creating or maintaining that poverty.

Take time to learn about another culture. Remember, to know only one culture is to know no culture at all. We need another culture to compare and contrast our own. That’s how we begin to have enough information to critique our own culture.

This is the reason schools actively promote study abroad programs. Getting students immersed (not just a visit or vacation) in another culture gives them a basis from which to view their own culture. By being present to another way of viewing the world we are transformed. In fact, this is the reason the ability to speak another language is a requirement for most masters and doctoral programs in theology.

Go deeper. Entering into another culture is a way to learn more about others and also more about who we are, why we think the way we do and what impact our own culture has on us. For Catholics this is “mission.”

Go deeper still. Learn about immigration reform. Consider how U.S. farm subsidy policies bankrupt farmers in Mexico and elsewhere, causing them to come north looking for work.

For authentic Chili Rellenos here’s what we did. Roast poblano peppers.

Peel the roasted peppers.

Stuff roasted and peeled peppers with strips of queso cheese.

Dip into egg whites whipped stiff with a bit of flour and fry until golden.

Into 1 cup simmering water whisk 1/2 cup of chili powder until red sauce thickens.

Into cooked rice stir chopped cilantro.

Into cooked black beans add green onion, celery or greens of your choice.

Serve chili rellenos smothered in red sauce along with rice and bean mixture. Add a cold beer with lime if you like.

Enjoy.
